Fried Egg, Turkey Sausage, & Veggie Breakfast
Want to add veggies to your breakfast? This egg and turkey sausage muffin includes Swiss chard. It’s so easy to make and doesn’t take long.
Consider adding vegetables to your breakfast such as:
- Swiss chard
Chop up the Swiss chard or spinach, and cook it on an electric griddle or in a pan on the stove. Add chopped onions or grated carrots. For this recipe, I used frozen turkey sausage that is heated up in the microwave. You can fry eggs in no time. Put the muffins in the toaster.
Fried Egg, Turkey Sausage, and Swiss Chard Breakfast Muffin
A breakfast muffin with egg, turkey sausage, and Swiss chard
- 2 each English muffins
- 2 large Fried Eggs
- 2 each Turkey Sausage Patties
- 2 cups Cooked Swiss chard about 1/3 of Swiss Chard that comes tied and bundled together
- 1 tablespoon Coconut Oil
- 1/2 each Yellow Onion
Chop up the Swiss chard and onion.
Heat the electric griddle to about 300 degrees, add the coconut oil, and fry the Swiss chard and onion until tender.
Add the eggs to the griddle, and fry according to your preference.
Cook the sausages in the microwave, and toast the muffins.
Butter the muffins, place the veggies on the bottom muffin, place, the sausage on top of the veggies, place the egg on top of the sausage, and cover the egg with the top of the muffin.
Since this recipe calls for vegetables with the egg and sausage, the muffin is big. I cut mine in half. You could actually make one muffin and cut it in half if the two people eating the breakfast are light eaters. However, you’ll want to make two of them if the recipe for serving two hearty eaters.
Try including veggies with your breakfasts. Many people have a difficult time fitting in all the vegetables they need daily. It’s the same as you going out to a restaurant and ordering an omelet that comes with spinach, peppers, or onions, etc.
Vegetables are good with omelets. But I have enjoyed combining different greens such as spinach, kale, and Swiss chard with fried eggs – and always onions. My favorite onions are the sweet ones.
A healthy breakfast like this loaded protein fried egg, turkey sausage, and veggie muffin is filling. Try it out. Change it up if you’d like. You can also add cheese.
Since I try not to eat too much bread, I used the Thomas brand of muffins that are multigrain with only 100 calories.
