Cook this easy beef shank steak veggies for two. It’s an easy slow cooker meal. Go to work all day, and come home to the aroma of dinner waiting.

What is Beef Shank Steak?

The beef shank is the leg part of a steer or heifer and can be too tough to eat if grilled. You can sear it and then cook it in a covered pot on the stove on low with enough liquid that it won’t be too dry.

Beef shank steaks have a round bone in the middle. The two steaks cooked in the following recipe were small and very thick. By the end of the nine hours that they had cooked, the meat was so tender it fell apart easily with a fork. One cup of water was used so that the meat was juicy and not dry.

Slow Cooker Beef Shank Steak Meal for Two

Ingredients

  • 3 each Small Sweet Potatoes
  • 1 each Medium to Large Eggplant
  • 2 each Beef Shank Steaks Bone In
  • 1 cup water
  • 3 tablespoons butter
  • 3 teaspoons Santa Fe Seasons Six Seasonings or your favorite spices
  • 2 teaspoons McCormick Grill Mates Mesquite

Instructions

  1. Season steaks, place them in the bottom of the slow cooker.

  2. Pour one cup of water in the bottom of the slow cooker (not over the steaks).

  3.  Cut butter in small chunks.
  4. Wash the sweet potatoes, and cut them into medium-sized chunks with the skin on.

  5. Peel the eggplant, cut into 1/4 inch slices, then cut into fourths.

  6. Place a large piece of foil inside the slow cooker on top of the steaks, making a bowl shape.

  7. Place the eggplant and sweet potato chunks into the foil, season, and place chunks of the butter evenly around.

  8. Seal the foil, put the slow cooker lid on, plug in the slow cooker, and turn it on high.

  9. Cook for 9 hours.

Cooking vegetables in foil inside the slow cooker and on top of the meat is very easy to do. All you do is season the veggies, put them inside the foil, seal the foil, put the lid on, and turn the slow cooker on.

  • Irish potatoes
  • Carrots
  • Eggplant
  • Onions

Try a slow cooker steak dinner. If you don’t like the hassle of cooking when you come home from work, consider cooking up some mouth-watering beef shank steaks or Ribeyes in the slow cooker. These two steaks are probably my favorite ones.
