Spinach and Cheese Omelet Stuffed with Bacon

A delicious spinach and cheese omelet stuffed with bacon

Ingredients

  • 2 Teaspoon Coconut Oil
  • 1 Handful Spunach (raw)
  • 6 Large eggs
  • 1 Handful Grated cheese
  • 6 Slices Thick bacon, precooked in oven and cut or torn into bite-size pieces

Instructions

  1. Place a sheet of parchment paper onto a cookie sheet, and place 6 slices of bacon on top of it.

  2. Bake at 400°F for 15-20 minutes.

  3. After the bacon is cooked, plug in your electric griddle and turn the temperature to approximately 325°F.

  4. Add the coconut oil on the griddle.

  5. Add a handful of spinach.

  6. Beat the eggs with a whisk then pour the eggs on top of the spinach on the griddle.

  7. Let the eggs cook for about a minute, then add a handful of grated cheese on top of the egg and spinach mixture.

  8. Shape the eggs, while they’re firming up, into a rectangle with a spatula.

  9. When the egg mixture looks firm enough to fold over, use a spatula to cut into three sections.

  10. Fold over each section and press each one with the spatula to make them spread out longer.

  11. Turn the griddle off.

  12. Slice each omelet in the middle to stuff bacon pieces into.

  13. Sprinkle several bacon pieces on top of the omelets also.

  14. Serve the omelets with toast if you wish.

Recipe Notes

The recipe takes about 20 minutes for the bacon and about 4 minutes for the omelets. However, it may not take as long if you cook your bacon in the microwave, in a pan on the stove, or on the griddle. And you don’t want the eggs to cook so fast that they start turning brown. You may need to turn your griddle down to 300°F if it’s cooking too fast.
