Slow Cooker Beef Shank Steak Meal for Two

Ingredients

  • 3 each Small Sweet Potatoes
  • 1 each Medium to Large Eggplant
  • 2 each Beef Shank Steaks Bone In
  • 1 cup water
  • 3 tablespoons butter
  • 3 teaspoons Santa Fe Seasons Six Seasonings or your favorite spices
  • 2 teaspoons McCormick Grill Mates Mesquite

Instructions

  1. Season steaks, place them in the bottom of the slow cooker.

  2. Pour one cup of water in the bottom of the slow cooker (not over the steaks).

  3.  Cut butter in small chunks.
  4. Wash the sweet potatoes, and cut them into medium-sized chunks with the skin on.

  5. Peel the eggplant, cut into 1/4 inch slices, then cut into fourths.

  6. Place a large piece of foil inside the slow cooker on top of the steaks, making a bowl shape.

  7. Place the eggplant and sweet potato chunks into the foil, season, and place chunks of the butter evenly around.

  8. Seal the foil, put the slow cooker lid on, plug in the slow cooker, and turn it on high.

  9. Cook for 9 hours.
