Summer is Coming Soon Summer officially begins almost four weeks from now. Spring has sprung forth with such beauty in gardens and vineyards, bees have been busy pollinating, and temperatures are warming up.   The summer solstice falls on June 21 this year at 12:24 a.m. EDT. But for the rest of North America, the first day of summer will be June 20. I’m excited because the release date for my new Simple Summer Recipes cookbook is June 15! “If you decide to make a purchase through my links, Amazon will pay me a commission for it. Strawberries in Summer If I had to pick one favorite thing about summer, it would be fresh strawberries. Plan a Strawberry Picking Outing Want to plan a fun outing with your daughters or sons? Take them to a strawberry farm to pick fresh berries. It’s so much fun. You pick. You pay. Then you take them home and come up with all kinds of recipes for the big basket of strawberries you came home with. My daughter and I were invited by some friend to go strawberry picking when she was a young girl. We had a fun day eating those fresh-picked strawberries.  The strawberryRead More →

Buttermilk was often enjoyed by my family as I grew up as a night-time snack with crackers. I have many memories of my dad standing at the end of the kitchen counter drinking the stuff. He would crush a few crackers into the buttermilk and eat them with a spoon. It’s about like eating soup with crushed crackers. My parents and brothers liked buttermilk, but I never did. I tried it a couple of times, but one taste was all the sour I could stand. Later, when I was married and learning to cook, I discovered great recipes that called for buttermilk like pancakes andRead More →

Strawberry Souffle for National Dessert Day

Hey, y’all! It’s National Dessert Day! One of the kitchen joys I like the most is preparing a dessert because I love sweets and enjoy making them for family and friends. Lately, I’ve strived to be more mindful of my daily nutritional intake – including desserts. Call it food for comfort, reward, or whatever you think best fits, sweets just simply taste good. That doesn’t mean I don’t like eating meat or vegetables. The bottom line is that I prefer the main meal – and the dessert. Who says I can’t have the cake and eat it, too? Since using MyFitnessPal, an easy-to-use IOS calorieRead More →

Strawberries in October

When Fall arrives, I think of apples and pumpkins. This week, though, I was surprised with a half flat of fresh strawberries from my Pattycakespantry.com blogger friend. I’ve been browsing through several cookbooks to see if I might discover a different recipe for strawberries. I found a custard berry parfait recipe in a Taste of Home cookbook. Incidentally, I got to attend The Taste of Home Cooking School this week. That was fun. It would have been more fun had we been able to taste the food. I hadn’t eaten dinner before going (not a wise thing to skip dinner before the cooking school). Unfortunately,Read More →

When three-digit summer days make me feel too hot to eat, that is one hot day and a miserable me. I don’t like to be hot. The last few days have been that kind of hot, so a cool pudding craving came over me one day. Looking in my stash of pudding boxes, I found a sugar-free vanilla one. Sounded good to me. Mixing it with two cups of 2% milk and at least three serving spoonfuls of Cool Whip, I was ready to sit down and enjoy a cool summer day dessert. Breakfast is a good way to start the day. On holidays and special occasions, like when company came, my mother used to cook French Toast. Since she didn’t make it often, I suppose that is why I never did. I preferred toast, pancakes or biscuits except on vacations and occasionally at a restaurant (if it looked too good to pass up). Then I would order a fancy meal – French Toast with bacon and eggs. Dining at restaurants is a luxury most of us in the fast-paced living of the 21st century are accustomed to, including expectation of top-notch service. But how many people considerRead More →

It’s strawberry season! Fresh organic strawberries taste amazing. Today I’m going to share two new recipes I tried last week. Before I share them with you, let me tell you about my foodie blogger friend from PattyCakesPantry.com. Like me, Patty Cakes grew up around southern cooking and home-grown vegetables and fruit. She stopped by a side-of-the-road fruit stand and picked up a flat of the gorgeous berry beauties. Knowing how I love fresh strawberries, she brought them by and split the flat in half with me. It was perfect timing because I had used the last ones in the two new recipes I’m going toRead More →
