Cooking a Slow Cooker Dessert for Two is Easy with this Mango Bread Pudding
If you like mango, try this quick and easy bread pudding dessert in a slow cooker. Enjoy the richness of a southern sweetness without all the loaded calories and carbs. It’s a creamy delight and only takes two hours to cook.
People who are careful about eating healthy food but who like dessert might hesitate at making a bread pudding dessert because bread:
- has a lot of carbohydrates
- makes you feel bloated
- can cause weight gain, if too much is consumed
- when it’s a dessert, only makes you want more
Some people on a strict diet refuse to eat any bread. Of course, too much of any food can cause weight gain. Eating moderately is the key. In case you are an individual who is looking for a light dessert and trying to be careful about the carbs, you might want to try this mango dessert out. Here’s why:
This recipe includes a fat-free product, slices of fresh fruit, and is on the lighter side in regard to nutrients.
Years ago, a friend of mine, Kelly, worked for an elderly couple. The older lady would make her special bread pudding recipe for Kelly nearly every time she went over to the couple’s house. I had a taste of it and fell in love with the incredible flavor. It was different than the kind I was used to with raisins. It was made with peaches.
I never did get that recipe. The story is quite a sad one because my sweet friend passed away several years ago at a young age. However, I have wonderful memories of fun times we had. We both liked to cook and bake and would bring our favorite recipes to share on fun outings with our children. Of course, one of the best desserts was the peach bread pudding that she had learned to make.
Often, I’ve wanted to make that peach bread pudding dessert. Recently, however, I have gone crazy over the way mangoes taste. So juicy and tasty. I wondered how it would be to make that dessert but with mangoes instead. I tried it. It is amazing. Wait ’til you find out the secret to that southern sweetness I mentioned earlier.
Slow Cooker Mango Bread Pudding
Make this super easy and amazing mango bread pudding in the slow cooker.
- 1 Tablespoon Butter
- 3 Each Thomas Nooks and Crannies English Muffins (light 100 calories, multigrain)
- 1 Each Mango
- 1/2 Cup Simply Orange juice, high pulp, not from concentrate
- 2 Large Eggs
- 1/2 Can Fat Free Evaporated Milk
- 1-1/2 Teaspoons Cinnamon
- 3 Packets Splenda
- 2 Tablespoons French Vanilla Creamer, liquid
Butter the bottom and sides of the slow cooker.
Slice each muffin into four slices, then cut the slices into bite-size chunks.
Peel the mango and slice.
Place the muffin pieces into the bottom of the slow cooker.
Place the mango slices on top of the muffin pieces.
Beat together the eggs, orange juice, evaporated milk, Splenda and cinnamon.
Pour the egg and milk mixture on top of the muffins and mangoes.
Cook for two hours on high.
Now, here's the secret: place the bread pudding into serving dishes and drizzle French Vanilla creamer on top. YUM GOOD!
Consider making the following substitutions to the recipe:
- peaches instead of mangoes
- sugar-free vanilla-flavored creamer
- include a teaspoon of vanilla in the recipe, and top with whipping cream instead of the creamer
- add pecans
