Meatball Chili
Easy meatball chili recipe in the pressure cooker
Ingredients
- 1 Can Low Sodium Chili with Beans & Vegetables
- 1 Can Ro*Tel Green Chiles & Tomatoes
- 4 Precooked large meatballs
- 2 Cups Precooked brown rice
Instructions

Add the meatballs and rice then stir all the ingredients.

Close and lock the pressure cooker lid and choose the soup setting which cooks for 35 minutes.

Serve with grated cheese and crackers.
How many recipes can you create with ten pounds of ground beef? Grilled hamburger patties, spaghetti and meatballs, meatloaf…that makes three recipe ideas, at least three or four pounds. Today I came up with another recipe – Meatloaf Chili! Oh my goodness! It’s one of the easiest meals to cook in a pressure cooker.
A note about my southern cabin cooking lately: I’m on a mission of getting fit. I hated the extra pounds I had put on and made up my mind to get fit. I have several whys to inspire me.

What I did with
ten pounds of
ground beef:
I purchased a ten-pound package of 93% lean ground beef during a $25-week-grocery-budget challenge. How could I resist? That whole chunk of beef cost $34.80. By my calculations, I saved $1.40 per pound. The one-pound ground beef packages were $4.88 each.
The next day I had to get my recipe-thinking-cap on with all the hamburger meat. I froze a freezer rack half-full of packages of ground beef. Part of it was pre-cooked, but the bulk was divided into patties or one-pound amounts for different recipes.
Ground Beef Recipe Ideas
Most of the beef is still in the freezer. But I’ve listed a few of the recipes made so far:

I’ve only gone through four freezer packages since buying the ground beef. Two packages were sent with my trucker-hubby for his crockpot meals. He said the meatloaf was great!
It’s very easy to make meatballs and meatloaf in a Farberware 7-in-one programmable pressure cooker. Season the hamburger, shape the meatballs and fill two mini loaf pans. Put the meatballs on the bottom of the pot.
Next, set the Farberware cooker’s stand inside. Then, put the loaf pans side by side on top of the rack/cooker stand. Using the pressure cooker stand (Amazon has pressure cooker stands available) makes it very convenient to cook multiple foods at once. It’s amazing! If you’re using a pressure cooker like mine, you add water (this recipe is not included in this blog post) and close and lock the lid. Then, you choose the Sear-Roast setting which cooks about 45 minutes.
Allow the meatloaf and meatballs to cool some before storing in freezer bags. Once you freeze them, they are ready to pull out and pop into a recipe like the Meatball Chili. So convenient!
As a food blogger, a frustrating blogging experience is when the Internet is slow – like today. Smartphones do make it possible to write a blog post, however (this blog post is one of those kinds). But crazy things happen. Pictures may be turned sideways, for instance. So if you notice some off-the-wall technical mishap in this blog post, it’s the “smart” phone way. Speaking of smartphone blogging, I recommend (and intend on purchasing) a folding wireless keyboard. Typing on an iPhone or Android mini keyboard can be tiresome for the blogger’s typing.
