Chicken Salad Alternative

The craziest thing happened when I went grocery shopping this morning for the items in this recipe at the H..E.B. store. I picked up everything I needed – except the chicken. This is how new recipes are sometimes created. Unexpectedly. Unplanned.

I had intended to cut up all the salad ingredients, mix them up, and add the chicken later. And that’s exactly what I did in spite of having to go to the grocery store again.

The best thing to do is stock up on canned chicken. If you choose to boil an organic whole chicken, great. If you don’t have one on hand, use the chicken in a can from Sam’s Club. Or order some from Amazon if you don’t want to make a trip to the grocery store – Kirkland’s brand that looks like this:

But can you guess what I ended up having for lunch during my Lyft driving? A chicken-less salad sandwich. LOL.

I started by washing the strawberries and chopping the Pink Lady apple.

You should purposely leave out the chicken occasionally from your chicken salad. It’s actually refreshing and tastes very good. And, of course, it contains less calories.

I like to boil a whole chicken, let it cool, store it in the fridge until the next day. Then I debone it and use the meat for chicken and dumplings or.a chicken salad recipe.

However, sometimes I buy canned white chicken from Sam’s Club for chicken salad. Not this time, though. Got it from Aldi’s. By the way, my daughter said their chicken salad is the best. Not wanting to spend the time to chop up veggies, fruit, and nuts?

Try one of the Aldi versions: Classic or Cranberry Almond (cranberries for Valentine’s Day sounds good, doesn’t it?)

A chicken salad that includes lots of red for Valentine's Day - apples, strawberries, bell pepper

Ingredients

  • 2 large strawberries
  • 1 Pink Lady apple, skin included
  • 1/4 cup chopped celery
  • 1/3 organic red bell pepper
  • 1/4 cup organic dried cranberries
  • 1/4 cup Walnut pieces
  • 1/2 cup mayonnaise with olive oil
  • 1 can white chicken

Instructions

  1. Wash the fruit and veggies.

  2. Slice the strawberries into small chunks.

  3. Chop the apple into small chunks.

  4. Combine the strawberries and apple pieces into a container.

  5. Add chopped celery and add to the strawberries and apple.

  6. Chop the bell pepper into small pieces and add to the mixture.

  7. Add the dried cranberries.

  8. Add the walnut pieces.

  9. Stir in the chicken.

Recipe Notes

The salad is approximately 240 calories. If you add the salad in a sandwich, Dave's bread used in the photos is about 110 calories per slice.

If you missed the chicken salad from January served with croissants, it tasted delicious. It’s so easy to open a can or two of crescent rolls and bake them in the oven. Then you slice them and stuff with chicken salad.

Making festive Valentine’s Day salads is a great thing to do because vegetables and fruits are healthy for you. In addition, there are plenty of red veggies and red fruits to choose from to change things up a bit.

Chicken salad can be as simple to make as you want it to be. Prepare it with as little as three ingredients like chicken, mayonnaise, and celery. However you make it, enjoy.
