Baking with Natural Sugars
Like brownies, these banana bars can be addicting – and they are made with honey and whole grain flour. Nutritious. Great snack for kids (no white sugar in these baked goodies to get them all hyped up on).
Take your children or grandchildren out for donuts one morning, and watch how quickly the sugar takes effect. No wonder some moms refuse to give their children any sugary foods or snacks. They act about like adults who are addicted to coffee when they don’t have any caffeine for a day or two. Irritable. Snappy. Whiny.
Bake with Honey
The Honey-baked Banana Bars treat is inspired by a banana cake recipe from Shirley Engelhardt’s Victorious Health Recipes, a cookbook focused on cooking and baking with natural sugars. Since early December 2018, I’ve been trying out several of Shirley’s recipes from her book. I have fun trying them out on my grand littles. They let me know real quick what they think. The banana bars (they actually make me think of brownies without the chocolate) went fast.
The grand littles aren’t the only ones who love to eat sweet stuff. I’ve liked sweets all of my life. My favorite cake has always been German Chocolate Cake, a dessert my mother often made. I asked her once as a teen why she didn’t make them much anymore. She said, “We were all gaining weight.”
Honestly, I don’t have it all together when it comes to losing weight and keeping it off. By the time Thanksgiving, Christmas, and my birthday in early January are over, I’m back to working out and staying away from desserts. Nevertheless, I never get too old to want to change bad habits (like baking with sugar at home).
Don’t Throw Out Ripe Bananas
If you and your family tend to eat sweet snacks, make these banana bars. When you buy bananas and they get really ripe, don’t throw them out. Mash them up, and mix up a batch of these brownie-like treats. You can make them with all kinds of variations, of course. I’ll be sharing more recipes I’ve created that were inspired by the Victorious Health collection, like my Everything Mini Bundts. I got the idea for the mini bundt cakes when I made the banana bars. The bundts and the bars taste wonderful.
Make the banana bar recipe, and have fun with creating your own version.
- 1 egg
- 1/4 cup coconut oil
- 1/2 cup honey
- 2 medium bananas
- 3/4 cup white whole grain flour
- 1/4 tsp sea salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp baking soda
- 1/2 cup rolled oats
- 1/4 c chopped walnuts
- 1/2 box organic raisins
- Beat egg in a medium-size bowl.
- Mash two bananas with a fork.
- Add the mashed bananas, coconut oil, and honey to the eggs and whisk or beat well.
- Add salt, cinnamon, nutmeg, and baking soda.
- Mix the flour in gradually.
- Fold in the oats.
- Mix in the walnuts and raisins.
- Bake in an 8"x8" pan, buttered and floured, at 350 degrees.*
