Is there a vegan substitute for bacon?

If you love bacon but don’t eat it because you’re a vegan, check out No Meat Athlete’s bacon recipe substitute . I tried to eat vegetarian meals for a month. The plan didn’t work out so well for me. Instead, my recipes mostly became semi-vegetarian. Therefore, I would not make a very good vegan. I feel for you, though, if you love and miss bacon.

When you’ve made up your mind to follow a vegan diet consistently, you must make sacrifices on tastes and textures of foods you’ve enjoyed in the past. Although I have not tried the vegan bacon by No Meat Athlete, I’d say definitely make it. The recipe looks easy enough to make. You’ll never know unless you give it a try.

I can recall both of my parents frying bacon for breakfast. Daddy usually prepared my school lunch, and many times it was two slices of white bread, mayonnaise, and a couple of bacon slices, cold. But that was the best-tasting lunch, and I loved it.

When I think of BLTs, I think of my mother and a cafe our family used to go to with folks from the church my dad was the pastor of. The Sunday school superintendent and his family occasionally would meet us there to visit after the Sunday evening services. Everyone would order hamburgers at the diner (they had the best HUGE Texas-size burgers), but not her. She’d get the BLT that was served in three separate triangular-shaped mini-stacked sandwiches.

I don’t recall if my mother ever ate a BLT for breakfast, but it’s actually quite delicious. How could it not be if it has bacon? I like my bacon the way I do eggs – any time of the day.

Let me tell you how I came up with this Breakfast BLT. I had purchased bacon at the grocery store one day on a whim. A day or two later I decided to make  BLT but didn’t have regular bread. All I had was cinnamon raisin bread. Nah, I thought at first. But I changed my mind, deciding that it might taste pretty good. It did!

Often, I make up recipes according to what I have on hand in my fridge and pantry. Sometimes, the concoctions seem crazy. However, combining new foods together that I’ve never heard of before is fun. Why go to the store if I can make do with what I already have? Not only does this save on the budget. It’s a creative way to come up with new recipes.

Ingredients

  • 2 slices H.E.B. Naturally Hickory & Mesquite Smoked Original Bacon No MSG. Gluten Free.
  • 2 slices Cinnamon Raisin Bread Thomas brand
  • 1 Red Leaf Lettuce
  • 1 slice Tomato
  • 2 tsp Mayonnaise and/or Mustard Or put as much as you like
  • 1 slice Cheese, optional Whichever kind you prefer

Instructions

  1. Place two slices of bacon in a cold cast iron skillet and turn the burner on medium heat.

  2. Fry the bacon approximately four minutes (depending on your stove and how fast it cooks).

  3. Turn the bacon over and cook another two minutes.

  4. Tear off a couple of paper towels, remove the bacon with a fork or tongs, and wrap them inside the paper towels to drain the grease well.

  5. Toast the bread.

  6. Add the mayonnaise (and/or mustard) to the slices of bread when they are ready.

  7. Cut or tear both slices of bacon into two pieces (makes you feel like you're eating more).

  8. Place the bacon on one of the slices of bread.

  9. Add the tomato slice next.

  10. Add the lettuce on top of the tomato, and top with the other slice of bread.

You can use any type of bread for this recipe. Combining the cinnamon raisin bread and bacon together, however, really makes this breakfast sandwich pop with flavor.

I like to fry bacon in my cast iron skillet on the stove, but there are other methods that work just as well. Cook it in the microwave, the oven, and even on the grill. I wouldn’t want a microwave grill without a cover. You can cook up to nine bacon slices in this grill – and it has a cover.

A cousin of mine doesn’t care for the smell that bacon leaves after it’s cooked, so she cooks her on an outdoor stove. Copper oven pans are popular now. Consider purchasing a copper bacon drip rack pan for the oven, like the one in the photo below.

Copper Chef advertises the pan as non-stick and dishwasher safe. Additionally, it can be used as a cookie sheet. I’ve been thinking of buying one. If you already have one, how do you like the way it cooks the bacon?

I prefer the stove method for cooking bacon, but the copper oven method of frying is appealing to me, too. A drip pan eliminates the need to drain bacon on paper towels. Yes, this item is definitely placed on my to-buy kitchen appliances.
