How to Cook No-Soak Red Beans

Kitchen appliances make life in the kitchen simple compared to the days when I was growing up. Now there are all kinds of gadgets for slicing vegetables and fruits. A knife still works, though. Although an onion slicer is nice and handy to use, the onion in this red bean recipe was sliced with a sharp knife that worked great. My mom cooked on the stove in large pots of peas, beans, greens, and roasts on low all day, and she was always “tired out” as the saying goes in Texas. 

I can well remember the loud hissing sound coming from the stove type of stainless steel pressure cooker back in the day. However, that particular cooking appliance didn’t make it on my want list for my wedding showers. Somehow, I managed without one until recently. Oh, what fun I’m having cooking with this new electrical pot.

Red Beans in the Pressure Cooker

Today I made a pressure cooker pot of red beans. Red beans and cornbread are considered a full meal in the South. So I made cornbread in the slow cooker while I cooked the red beans in this dazzling pot in the picture above. It’s really quite mesmerizing – it sings to me. If you are trying to decide whether to purchase an Instant Pot or a pressure cooker, the picture above shows you what the Farberware pressure cooker looks like. It works great, is easy to clean, and I am delighted with it.

If you’re cooking red beans on the stove, you’re used to soaking the beans and cooking them on low for awhile. The red beans I cooked in this new Farberware appliance didn’t have to be soaked. In fact, it’s the easiest way I’ve ever cooked beans. Look how easy it is to make this recipe:

Pressure Cooker Red Beans Recipe

Ingredients

  • 2 cups dried red beans
  • 1/2 purple onion
  • 4 cups water
  • 2 teaspoons Knorr Chicken Flavor Bouillon
  • 1 teaspoon Santa Fe Seasons Six Seasonings
  • 1/2 teaspoon Santa Fe Seasons Chile Blend
  • 1/2 teaspoon Santa Fe Seasons Green Chile Lime Seasoning
  • 1/2 teaspoon McCormick Peppercorn Medley

Instructions

  1. Dice onion.
  2. Add the onion and red beans to the pressure cooker.
  3. Mix the bouillon seasoning and the other seasonings with the water and pour into the pressure cooker.
  4. Stir the ingredients.
  5. Lock the lid on the cooker, and select setting BEANS/LENTILS, and cook for an hour.
  6. Release the pressure.
  7. Add 1-1/2 cup of beans with the liquid into a blender, and blend until smooth.
  8. Pour the blended bean mixture back into the pressure cooker, and stir with the rest of the red beans.
  9. Serve the red beans over rice or with cornbread.

The texture of this red beans recipe is similar to refried beans because of blending the beans. It would go great with Spanish rice. Mix it with sour cream and salsa for a dip. I served a simple bowl of red beans with cornbread – Southern style.
