How to Make Veggies the Easy Way

Choose all the vegetables that you want to cook for meals for the day. Prepare them – cut, chop, dice. Get the electric griddle out, plug it in, and turn it to about 300 degrees. Take about two tablespoons of organic coconut oil and melt it on the griddle. Now add all the veggies to the griddle, season them with salt and garlic powder and any other seasoning you like, cook them on one side for 3-5 minutes, turn them over and cook for another few minutes. That’s it. Easy. Simple.

For Breakfast

Now that your vegetables are cooked and ready to eat, use a portion for breakfast burritos. Fry or scramble eggs, or make an omelet and mix the veggies in with it, and you’ve got breakfast. Put the remainder of the cooked veggies in a large baggie and refrigerate them until your next meal.

My husband likes to grill, and often we have grilled barbecue chicken. When you’ve cooked veggies on the griddle ahead of time, all you have to do is heat them up in the microwave. Or you can cut the chicken in strips, mix them with the left-over vegetables back onto the griddle, and have a chicken and veggie stir fry.

Prepare a lot of veggies to cook on the griddle, and you’ll have plenty to use for lunch or dinner. If you make a very large amount, you can freeze them.

  1. When we are going to have a busy week, I will grill vegetables ahead of time to use in omelets. Omelets are very fast if you don’t have to wait for the veggies to cook.

      That is a very good idea. I do that, too. What also helps is to chop up all the veggies the evening before so they’ll be ready to stir fry the next day for dinner.
