Try out this “Mac & Cheese” for your kiddos. It’s baked and even includes a veggie. I made it for my daughter and son-in-law twice. They said it looked like Mac & Cheese, but it didn’t have cheese on it. The second time I made it I added cheese. Yum! My little toddler granddaughter was in on the cheese version – and she loved the bacon. If a toddler approves of a recipe, there’s no doubt about it – it’s good!
A Mac & Cheese veggie that even kids will love
- 1 Head Cauliflower
- 1/2 Pkg. Bacon
- Cheddar Cheese, Grated
- Garlic Powder to taste
- 2 Tsp Olive Oil
- Preheat oven to 375 F.
- Separate cauliflower into tiny flowerets.
- Place flowerets onto a baking sheet.
- Mix garlic powder and olive oil with cauliflower.
- Cut 1/2 pkg of bacon into 3 sections.
- Add bacon pieces.
- Top with cheddar cheese.
- Bake for 20 minutes.
What I like about this recipe is that you can prepare the cauliflower ahead of time. Then it can be tossed quickly and popped into the oven for dinner the next day. Serve it as a vegetable side dish or main dish.
Cauliflower tastes bland when eaten cold and raw unless dipped in ranch dressing but becomes a delightful vegetable when prepared hot. For example, fixed like southern twice baked potatoes or my other Pinterest favorites, your family and guests who don’t like vegetables will be asking for seconds.
