A Quick Sausage Breakfast

Breakfast on the weekends I look forward to, but fitting in breakfast early on a weekday is quite a challenge. I’ve been on a quest to do a breakfast pork sausage and egg entree. A necessary ingredient for this special breakfast is a hardboiled egg. I’ve surprised even myself with creating vegetable breakfasts.

Since coming off of a 21-day detox purification program awhile back, I have discovered a number of ways to add more vegetables to my diet – especially for breakfasts. The easiest thing to do is boil a few eggs ahead of time and keep them in the fridge, and they’re ready when you need them. My favorite breakfast medley includes boiled eggs, pork sausage, red bell pepper, green onions, yellow summer squash, and brown rice cooked on a griddle.


Pork Sausage, Egg, & Vegetable Stir Fry

A sausage and boiled egg breakfast stir fry
  • 4 pork sausage links
  • 1 boiled egg
  • 1/4 red bell pepper
  • 2 green onions
  • Handful of spinach
  • 1/4 yellow crookneck squash
  • 1 T. coconut oil
  • 1 cup brown rice, cooked
  1. Chop vegetables and cook in coconut oil on griddle.
  2. Stir in brown rice.
  3. Chop boiled egg and mix with all other ingredients.
  4. Variation: Make it a wrap!

The recipe above is for a stir fry entree, but simple variations can be made that taste wonderful such as the sausage-spinach wrap I made yesterday for my daughter and granddaughter for breakfast.

Breakfast Spinach Wrap

  • 2-4 Spinach Wraps
  • 1/2 Bag Fresh Spinach Leaves
  • 6 Boiled Eggs
  • 6 Pork Sausage Links
  • Grated Cheddar Cheese
  • Organic Coconut Oil

Boil eggs. Prepare sausage according to package directions. Chop eggs and sausage. Chop spinach and cook on stove with a teaspoon of organic coconut oil. Add eggs, sausage, and cheese to spinach and stir. Put a tablespoon or two full of mixture onto a warm spinach wrap, wrap it up, and it’s ready to eat. Enjoy!

  1. An easy way to make a veggie breakfast more achievable on weekday mornings is to chop and/or sautee your favorite breakfast veggies on the weekend or the night before. It takes no time to scramble a couple eggs and mix in some of those veggies, roll it up in a tortilla, or put it between two pieces of bread or toast for a fast weekday breakfast.
