Weekends are kind of like mini-holidays for people who work Monday through Friday. Mornings are typically rushed during the week with little time to spend extra time in the kitchen.

One of the fanciest breakfasts I remember my mother making was French toast. I only got to have that when on vacation. The occasion was when my two young stepdaughters were on a summer visit.

The eldest, Ivy, who stayed right by Mother’s side to watch, said, “I know how to make French toast.” A bond between those two began that day.

They were so much alike in some ways. Possible perfectionists, they had a particular way of having everything just so-so with their culinary and home decorating tastes.

Sweet little blonde Ivy continued to be a loyal granddaughter until the very end of her Nana’s life. When I couldn’t be by mother’s side after she was diagnosed with cancer, Ivy spent many days with her.

Holiday breakfasts are not complete until dipping hot biscuits in Ribbon Cane syrup with butter that has been mashed with a fork. That’s my family’s own simple little “recipe”. It’s one of those specialty foods saved for Christmas time, out-of-town guests, visiting family and occasional weekends. There’s nothing like it. A thick syrup, a little goes a long way.

Pancake breakfasts are at the top of my weekend breakfast favorites. A pancake breakfast consists of pancakes, syrup, and butter; one or two eggs; and bacon or sausage. That is a typical farmer’s breakfast (certainly not the popular skimpy dieter’s meal – more like a snack), one that will carry you all day without wanting anything more than a snack or two.

I have a toddler granddaughter who LOVES pancakes. One day she asked if I would make her some. Although I usually make mine from scratch, I was at her house. Her mommy and daddy keep a box of pancake mix handy. Since I didn’t think she and I would eat that many, I only made half a batch. As soon as I would make a few more, she was finished and ready for the next one. Mind you, they were small but much larger than a silver dollar. Finally, I ended up with three for myself – and then she wanted half of one of those. I gladly let her eat them because it’s difficult to get her to eat. It seems to me that she and I are like-minded when it comes to pancakes.

Last, but not least, is eggs. Yes, they have already been mentioned. Eggs, however, is definitely one of the best breakfasts ever. Eggs provide protein, they are a filler-up food, and they are incredibly yummy as an omelet mixed with several veggies and a spoonful of organic coconut oil. Serve with toast or waffle – or not. Vegetable and sausage omelets are also (I have another story about “also”) very tasty.

A note about also: I have one more little story about my little grand. On a visit with her and her family, I was babysitting one day. She asked for a certain food, and I asked her if she wanted milk also. She quickly let me know, “Not also. I want milk.” I suppose “also” food didn’t sound too appetizing to her.

If you haven’t figured out by now that breakfast is my favorite meal, now you know. I could be happy eating breakfast for any meal – especially on the weekends.
